Tres Leches Cake

I will go to bat for this cake. My mother stole this recipe from her manager at a restaurant she worked in and it has changed our lives. No notes. I've made it for countless birthdays and New Years and other miscellaneous ocassions. It's like heaven in your mouth.

For the cake:
6 eggs
¾ cups of sugar
1 teaspoon of vanilla extract
1½ cups of all-purpose flour
1 teaspoon of baking powder

For the milk mixture:
1 cup light cream
1 can of condensed milk
1 can of evaporated milk
1 cup milk

Toppings:
Whipped cream
Cinnamon

Separate the egg whites from the yolks. Add the egg whites to a bowl and start mixing with an electric mixer until you get soft peaks. Add the sugar gradually until you get stiff peaks. You could also use a normal whisk for this step, but it would take you a lot of time and elbow grease. Add the vanilla and the egg yolks one by one, gently folding them in with a spatula. Sift in the flour and baking powder and add them gradually to the mix, carefully folding until just combined.

Pour the batter into an 8x10 inch baking pan. This cake is going to be assembled and served in this baking pan, so if you care about appearances, choose a pretty pan. Or something idk. and bake at 180°C/350°F for around 25 minutes or until the top is a light golden color. Take out of the oven, poke holes in it with a fork or a knife and let it cool.

Mix the milk, condensed milk, the cream and the evaporated milk in a blender until well incorporated. You can also mix them with a spoon of course. Once the cake is cooled, pour the milk mixture on top. Cover with plastic wrap or aluminum foil and let set in the fridge for a couple hours.

Add the whipped cream and sprinkle some cinnamon on top when ready to serve.
